Put chicken breast in cold water and add onion, ginger and cooking wine. After boiling the pot, skim off the foam and simmer over low heat for about 20 minutes. -

Tips
Note on preparing the sauce: first add minced garlic and chili powder, use hot oil to release the aroma of garlic and red oil. After cooling, add salt, sugar and MSG, appropriate amount of light soy sauce and mature vinegar.
