Wash the kumquats. -

Hold the flower knife vertically and cut neither the top nor the bottom into sections. -

Flatten and squeeze out the seeds. -

Tips
The kumquats I bought are ripe and taste good enough when eaten raw, so be sure not to add too much sugar.
